Foodborne pathogens remain a critical challenge to public health all around the world. Escherichia coli and other Enterobacteriaceae represent a significant group of microorganisms to indicate areas with unfavourable hygiene conditions and potential facial contamination in foods. Escherichia coli mainly inhabits the lower intestinal tract of warm-blooded animals and transmits through the facial or oral route. Therefore, its presence in food should be avoided at all costs. Furthermore, studies reported that specific E. coli can even survive for extended periods and reproduce in extraintestinal environments. This suggests that the microorganism can integrate into indigenous microbial communities in food processing environments. Symptoms caused by this bacterium include not only diarrhea, but it is also known to cause sepsis and meningitis.
